Son of Man is a cidery in Cascade Locks in the Columbia River Gorge, specializing in Basque-style cider (Sagardo). Founded by Jasper Smith and Ella McCallion in 2018, they use wild fermentation and heirloom cider apples to create bone-dry, tart ciders aged in large oak foudres.
