About the Winery
Methode Sauvage was the original name of Iruai Winery, started in 2013 by Chad and Michelle Westbrook Hinds in Berkeley, CA. They relocated to Etna, CA in the Shasta-Cascade mountains of Siskiyou County in 2019. They focus on alpine varieties like Savagnin, Trousseau, and Mondeuse, pioneering what they call the "California Alps" wine region. Produced naturally without fining, filtration, or added sulfur dioxide.
