Lo-Fi Wines, headed by Michael Roth and Craig Winchester, produces natural wines with no additions except minimal sulfur. They employ whole cluster fermentation on reds and full carbonic maceration. Favor neutral fermentation vessels including neutral oak barrels, concrete tanks, and amphorae. Sources grapes from organic vineyards in Santa Barbara County.
