Ebb & Flow Fermentations is a craft brewery in downtown Cape Girardeau, Missouri specializing in wild and mixed fermentation beers. Uses housemade yeast blends including Kveik yeast (Norwegian strain) combined with wild yeasts captured locally. Founded by DeWayne Schaaf in 2019. NOT a winery - this is a brewery. Also operates under Schaaf family's collection including Brix Urban Winery in Ste. Genevieve. Known for experimental flavors including beet sours and barrel-aged cucumber-and-dill blondes.
