About the Winery
Bijou Creek Winery is owned by Erwin Hillman, who got his start making wine as a hobby in Fort Morgan in 2006. The tasting room opened in Greeley in December 2014. They produce wines from cold-hardy hybrid grapes including Frontenac, a winter-hardy grape developed by the University of Minnesota. Hillman retired early from Xcel Energy to pursue winemaking full-time.
