About the Winery
Iacopo Paolucci is a natural winemaker in Monte Castello di Vibio who planted 5 hectares of vines in 2008 after training at Antinori, focusing on hyper-local and native varieties. His organic estate produces Grechetto di Todi, Sangiovese, and Italy's only monovarietal Grero wine from clay and volcanic soils at 500 meters altitude, using spontaneous fermentation with indigenous yeasts.
