About the Winery
Tommaso Cappa is a young winemaker in the Valdibà hamlet of Dogliani, Piedmont, who cultivates one hectare of 40-year-old Dolcetto vines using biodynamic methods near the San Fereolo chapel. Since 2020, Cappa and his partner Agnese have produced approximately 1,600-1,700 bottles of Dogliani DOCG and around 800 bottles of Nebbiolo per vintage, employing spontaneous wild yeast fermentation, whole-cluster vinification, and aging in exhausted barrels with minimal sulfur additions.
