About the Winery

Established in 2003 in Coviolo on the outskirts of Reggio Emilia by Danny Bini, Podere Cipolla began with two small half-hectare plots of local grapes and has grown to 3 hectares. The winery specializes in bottle-fermented Lambrusco wines from indigenous varieties including Malbo Gentile, Grasparossa, Ancellotta, Spergola, Malvasia, Salamino, and the rare Montericco, practicing organic viticulture and believing that bottle fermentation best expresses the territory's potential.
