About the Winery
Colombaio di Cencio is an organic estate in Gaiole in Chianti with 25 hectares of vineyards surrounded by 80 hectares of Tuscan forest, divided into three distinctive crus: Cornia, Montelodoli, and Vinci. Founded in 1993 by German entrepreneur Werner Ernest Wilhelm and backed by Oscar Farinetti of Eataly, the estate produces Chianti Classico, Gran Selezione single-vineyard wines, and the Super Tuscan 'Il Futuro,' vinifying each cru separately to highlight the unique expression of galestro and alberese soils at altitudes of 280 to 480 meters.
