Casale dello Sparviero is an organic winery in Castellina in Chianti with a winemaking heritage spanning over eight centuries, originally founded as a monastery and later a fortified tower. The Andrighetti family has stewarded the estate since the 1970s, producing Chianti Classico DOCG, Riserva, and the single-vineyard Gran Selezione Paronza from 88 hectares of vineyards at an average altitude of 250 meters.
