Cellier d'Hautpoul is a wine producer in the Minervois appellation of the Languedoc-Roussillon region. Minervois is one of the Languedoc's most significant appellations, named after the village of Minerve, a Cathar stronghold perched above the river Cesse. The region produces predominantly red wines from Grenache, Syrah, Mourvèdre, and Carignan, grown on a mosaic of soils ranging from limestone scree to schist and clay. The Mediterranean climate, with hot summers and cooling mountain influences, creates wines of richness and character. The Hautpoul name refers to the historic area around the village of Minerve.
