Emmanuel Houillon is a winemaker in the Jura region of eastern France. The Jura is one of France's smallest but most distinctive wine regions, located between Burgundy and the Swiss border. The region is famous for its unique wine styles including Vin Jaune (yellow wine), Vin de Paille (straw wine), and sparkling Crémant du Jura, made from local grape varieties such as Savagnin, Poulsard, and Trousseau. The region's cool climate and limestone soils produce wines with high acidity and distinctive character.
