Hervé Azo is a Chablis producer based in Préhy, a village in the Yonne department of Burgundy. The estate produces wines from the Chablis appellation, one of the most famous white wine regions in the world. Chablis wines are made exclusively from Chardonnay and are known for their crisp acidity, mineral character, and flavors of green apple, lemon, and oyster shell. The region's unique Kimmeridgian soil, composed of limestone, clay, and fossilized oyster shells, gives Chablis its distinctive mineral edge. Wines from this terroir are prized for their purity, freshness, and excellent pairing with seafood.
