About the Winery
Jean-François Azoulat has been at the head of the property in Fitou since 1980. In 2009, he decided to vinify his grapes in one of the oldest cellars in Fitou, which once belonged to the village's only restaurant and was carved directly into the rock, giving it exceptional aging virtues. Fitou is one of the oldest appellations in Languedoc-Roussillon, known for its red wines primarily from Carignan and Grenache grapes grown on schist soils. The unique cellar carved into rock provides natural temperature control, allowing for ideal wine aging conditions. Azoulat's commitment to tradition and the exceptional character of his historic cellar contribute to wines of notable depth and complexity.
