About the Winery
Domaine Gibert is located in the village of Saint-Polycarpe in the Upper Aude Valley of Languedoc-Roussillon. Céline and David Forget acquired the estate in 2018, taking over 7 hectares of vines situated between 280 and 400 meters altitude, planted with seven grape varieties. The estate produces sparkling wines using the traditional method (Blanquette de Limoux and Crémant) as well as still wines under IGP and Vin de France labels. The terroir of altitude gives the wines a distinctive freshness and character.
