Damien Bonnet

About the Winery

A family domain of about 12 hectares on a clay-limestone plateau surrounded by oaks, on the right bank of the Tarn. Formerly delivered to the cooperative, the grapes are now vinified at the property by Damien Bonnet, who adopted organic agriculture from his installation in 2008. The vinifications minimize sulphiting, avoid forced extractions, and new wood is not used. The domaine is certified organic since 2011. Damien took over the family estate in 2008, converting from conventional to organic farming over three years. The estate produces Gaillac wines from indigenous varieties including Mauzac, Loin de l'oeil, Braucol, Duras, and Prunelard, using natural yeasts and minimal intervention.
