About the Winery
Domaine de l'Ambroisie is the story of a meeting between Thomas Colson and Rémy Welter, who were both working for a vigneron. When their employer stopped his activity in 2006, the two decided to take over the vines on lease. Starting from nothing, they now cultivate 9 hectares of vines and 1.5 hectares of mirabelle plum orchards. The estate produces wines under the AOC Côtes de Toul (one of the smallest AOCs in France with only 120 hectares total surface) including the famous Gris de Toul, as well as IGP Lorraine sparkling wines and various original creations. The vines are worked manually with hand harvests, and the estate practices reasoned agriculture. The mirabelle plums are cultivated following organic agriculture standards. The estate's name refers to the nectar of the gods in Greek mythology.
