About the Winery

A vineyard for six generations, originally oriented toward Cognac production (the only cru bouilleur de cru on the Arvert peninsula). However, the oyster farming activity and oyster maturation in 'claires' (oyster ponds) predominated until the 1970s. Jonathan Guillon, with his oenology diploma, established himself in 2010 and diversified the grape varieties. Bottling of Vin de Pays, Cognac, and Pineau des Charentes began at the property. The vineyard now covers approximately 18 hectares, in organic conversion since 2023. The estate combines viticulture with the traditional oyster farming heritage of the region.
