About the Winery

Jean-Pol Hautbois launched his Champagne brand in 1975, succeeding a lineage of farmers, winegrowers, and coopers. His son Fabien took over in 2010. The house is located in the Massif de Saint-Thierry, northwest of Reims, and cultivates 8 hectares with the three Champagne grape varieties: Pinot Meunier, Pinot Noir, and Chardonnay. Fabien Hautbois entrusts part of his grapes to the La Vigneronne de Serzy-et-Prin cooperative but ages his cuvées at the domaine for a minimum of 36 months. He vinifies his base wines in oak barrels and manages his domaine according to practices as close to organic as possible. The domaine is certified HVE Level 3. The village of Pévy takes its Latin name 'Pes Vitis' meaning 'at the foot of the vines'.
