Jérôme Billard
About the Winery
A 25-hectare estate located near the medieval castle of La Rochepot, in the Hautes-Côtes de Beaune, and managed since 2001 by Jérôme Billard, representing the third generation, in a spirit close to organic. The domaine has approximately 26 hectares of vineyards in different appellations throughout the Côte de Beaune, including significant holdings in the Hautes-Côtes de Beaune as well as parcels in Saint-Aubin 1er Cru, Saint-Romain, Auxey-Duresses, Beaune, Beaune 1er Cru, Chassagne-Montrachet, Santenay, and Pommard. Under Jérôme's stewardship, the domaine has transitioned to organic farming methods, eliminating chemicals and focusing on soil health. Harvesting is done by hand, and fermentation relies on indigenous yeasts.
