About the Winery
Since Grégoire Bonnet in 1862, six generations of winemakers have succeeded each other in Chamery, south-west of Reims. Today, Thierry and his son Cyril manage 10 hectares across 70 parcels in 1er Cru and Grand Cru villages on the northern flank of the Montagne de Reims. Certified organic since 2016, the estate was transformed when Cyril returned in 2013 after training in southern France. He introduced spontaneous fermentation with wild yeasts, no filtration, minimal sulphur (about 60% of wines are vinified without any additives), and often zero dosage. Their 10 hectares are spread across Chamery, Vrigny, Coulommes-la-Montagne, Verzenay and Verzy, with vines aged 35-80 years. The focus is on Pinot Meunier and Pinot Noir, complemented by Chardonnay and Petit Meslier. Annual production is around 60,000 bottles.
