About the Winery

Domaine du Chêne is a historic estate founded in 1865 in the heart of Roman Saintonge, though Pineau des Charentes production only truly developed from 1947. Jean-Marie Baillif took over in 1993 and manages 90 hectares of vines on clay-limestone soils near Pons, now supported by his children since 2024. The estate is a creator of spirits for over 150 years, specialising in Pineau des Charentes and Cognac, mastering the entire production process from vineyard work to ageing in their cellars. They are known for atypical and contemporary approaches to Pineau and Cognac through varied grape varieties, vinification, distillation and ageing techniques. They offer visits from vineyard to distillery to ageing cellars.
