Champagne Billecart-Salmon is one of the most celebrated family-owned Champagne houses, founded in 1818 by Nicolas François Billecart and Elisabeth Salmon in Mareuil-sur-Aÿ. The house remains in family ownership to this day, now run by the seventh generation of the family. Billecart-Salmon is renowned for its exceptional Rose champagne, which is considered one of the finest in the world. The house's philosophy centers on quality over quantity, with a focus on precision and finesse rather than power. The Brut Réserve, the house's flagship non-vintage champagne, is aged for a minimum of 36 months, far exceeding the Champagne minimum. Billecart-Salmon also produces the legendary Clos Saint-Hilaire, a single-vineyard Blanc de Noirs from Pinot Noir, and the prestige cuvée Le Clos Saint-Hilaire from its walled vineyard in Mareuil-sur-Aÿ.
