About the Winery
Les Caves du Plessis is a highly regarded estate in Saint-Nicolas-de-Bourgueil, managed since 2012 by Stéphane Renou, heir to five generations of winemakers. The domaine is known for its troglodyte cave carved into tuffeau stone dating from the 13th century, which offers stunning views over the vineyard. The 25-hectare vineyard features diverse terroirs of gravel, sand, and clay-limestone with tuffeau, which characterize their premium cuvées aged in oak barrels and amphora. The vineyard is managed using sustainable farming with grass coverage on nearly 80% of the surface. They produce AOC Saint-Nicolas-de-Bourgueil and AOC Crémant de Loire, with Cabernet Franc as the exclusive grape variety.
