About the Winery
Since 1995, Gilles Persilier, a former agricultural technician, has been established at Gergovie, a high place in the history of Gaul. He cultivates 8.5 hectares organically and has established himself as a reliable producer with his Côtes d'Auvergne cuvées whose names (Vercingétorix, Gergovia, Celtil…) refer to the distant past of the region. He now signs his wines using natural methods. The estate produces wines from the volcanic terroir of the Auvergne, focusing on Gamay for reds and Chardonnay for whites.
