The second Champagne-house investment in England, a partnership between Pommery and Hattingley Valley, confirmed Surrey's potential.
The region's chalky soils are composed of ancient marine fossils and provide excellent drainage, while south-facing slopes catch abundant sunshine. A cool but relatively sheltered climate preserves acidity and allows the classic Champagne varieties to ripen slowly and evenly.
