Overview
Cava is Spain's answer to Champagne, a sparkling wine made by the traditional method with second fermentation in the bottle. Although production extends to several regions, the historic and quality heartland lies in Penedès, Catalonia, around the town of Sant Sadurní d'Anoia. The Mediterranean climate, varied altitudes, and calcareous soils provide ideal conditions for sparkling base wines.
The classic Cava trio is Xarel·lo, Macabeo, and Parellada, each contributing structure, fruit, and elegance. Chardonnay and Pinot Noir are also permitted, and some producers are exploring single-vineyard and long-aged expressions. Cava ranges from crisp and youthful to complex Reserva and Gran Reserva wines with toasty, brioche-like depth.
